Potato Masala or Alu Masala for Dosa - Puri - Parotta - Chapathi


Easy Potato Masala curry, this curry tates awsome with Dosa, Puri, chappati and Porotta.
It best suits for Masala dosa and is one of the common and on demand south indian breakfast recipes. Alu masala and and dosas are made for each other. Let us get into making of this easy recipe with step by step pictures.

Easy Potato Masala Recipe


Ingredients:

Potatoes - 1/4 kg or 250 gms
Onion - 1 Large (Chop length-wise)
Tomatoes - 3 small (Chop length-wise)
Peas - 1/2 cup
carrot - 1 small 
Pudhina leaves - 5 to 6 leaves
Corriander leaves - fistful
Curry leaves - 5 to 6 leaves
Lemon - 1/2 wedge
Mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
Channa dal - 1/2 tsp
Turmeric Powder - 1 tsp
Hing - 1 tsp
Green Chillies- 2 (slit vertically)
Red Chilli Powder - 1 tsp
Salt - To taste
Water - 1 cup

Procedure:

1. Cut potatoes to half and boil them
2. Also half-boil peas and carrot
3. After boiling, cool potatoes to room temperature and peel and mash them 
roughly



4. Heat oil in a pan, add mustard, cumin seeds and channa dal and heat them 
till they splutter
5. Add onions and green chillies and let them fry
6. Now add peas and carrot and saute well



7. Add pudhina leaves, curry leaves, hing, turmeric powder and mix well



8. Add tomatoes and cook them nicely
9. Now add mashed potatoes, salt, turmeric powder and mix well.



10. Add water, cover with lid and boil/cook for some time.



11. Now potato masala curry is ready. Switch off and add lemon juice and 
garnish with coriander leaves.
